Lets them spy on your communications at either end
Lets them have their own secure way to transmit messages without going through the ISP backbones. Also if they are doing a lot of data transfer it reduces some pressure on ISP channels.

A) The majority of their business is internet based. Why on earth would they NOT invest in bringing faster and better connections to more places?
B) Even if it's just for their use, it's still going to alleviate massive issues of speed and performance for trans-Atlantic communication.
C) Most large companies are actually "based" out of Ireland because tax-evasion. This gets their "home-office" a faster connection to the rest of the company, too.
With continental drift and all, how does the cables deal with the, while stupidly slight, movement? Does a team on either side just add onto it or do the guys who lay it out have some excess to compensate?

They're not exactly taut at each end. Beyond that, the cables will fail for other reasons before continental drift snaps them. Some have been relaid for this reason.
