Do I use a condenser microphone if I want to record a small room with 2-6 people in it so that I can record their idle talk, don't really care about ambient noise, just need to record their voice well enough so I can hear it well. Think of it as a security mic setup.

Use any cheap omni mic and take out the spit guard then replace it with a tennis ball with a hole in the bottom. You will get very clear sound inexpensively using his method. It is commonly used in recording studios for acoustic pieces.

Optimally you would want to use either a conference mic that uses beam-forming to focus on specific sounds, or a PZM/boundary mic (pic related), which is kind of an omni mashed sideways. PZM mics use a property of physics to amplify sound pressure at the point it reflects off a surface, so they're much more sensitive than regular mics, and also discreet. You can record a small room fairly well with just one of these in the middle.
