How would /g/ go about acquiring the skills for a position like this if you've been doing systems engineering/SRE work for a few years and want to go more low level? I have some programming knowledge (c++, java courses) but professionally I've only written scripts for purposes of automation.

What type of systems engineering degree do you have ?

I have a degree in infosec but there was a lot of courses + interest that lead me into systems engineering. I know that I could pickup some books, join some mailing lists and try to take some low hanging fruit work but I'm not sure if that is the best method.

Depends on your knowledge, if all you know is "C" then start learning how computers actually work at the hardware level, understand what kernels are and what they actually do. The linux kernel is a good place to start since it's source is freely available and there are a few books outthere that describe it.
