I suggest you first learn how to use the basic command line tools until you're comfortable with them, it's really worth it if your serious about java dev.

Depends on the kind of Java dev you want to do.
If you want to make little gui apps, winderps is pretty much your go-to platform.
If you're wanting to do anything else OSX or linux is going to be your go-to platform.
I would recommend probably going full Debian and not trying to use OSX as a Unix substitute. OSX's new rootless security has fucked up the platform pretty hard, and I can only see it getting worse.

I myself consider SBT the platform for my Java development. Plus some editor, usually IDEA.
I can throw the SBT thing to another machine and basically nothing changes.
