Open source projects are not developed as products, thus there is little to no incentive to nicely document stuff.

Open source by people who are paid to do to make things tend to be a bit better. Otherwise it's made by programmers in their spare time and they want to code, not write docs or instructions or diagrams, and sometimes don't even care about UX/UI design
Lots of nice things are FOSS, though.
