But suppose I didn't want to do that, and instead would be happy with a simple monochrome display, could I re-purpose old TI calculators for this purpose?
I'm not even sure if the tech is compatible, but it would be fun and cheap if you already have lots of junk calcs

Unlikely, the chip on these calculators is specific to the TI itself, meaning you cannot push signals reliably. Why not just buy a dot-matrix LCD and work with that?
