Depends on the task at hand.
C++ for high performance, object oriented graphics, gaming or simulation projects.
C for low level device driver hacking.
C# for working with enterprise Windows projects, like shitty CMS apps for corporate and government clients.
Java for serious Linux and "modern" mainframe back-end systems.
JavaScript for all your front-end web and the occasional Node service.
Ruby for throwing together a CRUD app in Rails, and also for automated testing using Cucumber.
Bash for day to day data wrangling and manipulation.
Python for anything that is too painful to do in bash.
Scala for load testing using Gatling.
PowerShell for windows administration and VBA for office automation.
Plus others for other tasks.

I do OCaml for ~70% of my code. I also use Haskell and Scheme for some general purpose crap. For Windows/.NET I just use F#.
If it's gotta be fast, C or Rust.
For messing around with stuff for fun I like Idris.
I want to get into some more (Erlang, Elixir, and Ur/Web for web shit + Ruby and Perl6 for scripting).
