Is there a way to slightly debotnet the google apps package before flashing it? I vaguely remember reading about removing a few files from the .zip before.

Just don't install gapps at all.
And if you need anything like the play store or something, just download the apk and it will install the necessary dependencies.

technically you are safe as long as you avoid google play services.
minimal gapps install should be fine(playstore, drive, gtalk, maps).
they do not require play services.
the google play services is where most of the data collection happens. it also interlocks google apps.
