Installing the initial system is maybe 0.01% of the time you will be spending using the distro, so if that's the hurdle where you decide "no this is too complicated for me", then Arch isn't for you. I'll give you that.

A minimalist distro is nice because I know more or less what's on it and why it's on it -- at least more than I would with ubuntu. I also like the bleeding edge thing, with the newest update as quickly as possible. On Ubuntu/Debian and similar systems I would just painstakingly add pre-compiled untrusted upstream package channels, might as well go with Arch then.
