I can download music go my phone as well btw. I can then easily organize my music by moving files around in a file explorer and maybe download an album cover if it's missing.

Yes it's so much worse than the Windows ecosystem. No wait, Windows blows and Linux is even worse for music library management, sharing, encoding, etc.
I have a Powerbook G4 from 2001 that happily plays the music library shared from a new Mac Mini. On a Mac at least iTunes is a pretty lightweight piece of software. With Windows you're running a whole environment like WINE which provides you with the Cocoa / Carbon libraries needed to run your software.

It's a literal list of songs, tracks, etc, with a sidebar you can hide or show with your playlists.

It's running a gigantic OS X library set on Windows in the Yellowbox environment. On OS X it doesn't need that, as the OS provides all the libraries, it's just some glue code. Not bloated at all.
I use it and have for what, 15 years now? 10:1 my music library is vastly larger than yours too. It's 95% legally ripped from my own CDs or otherwise legally obtained too.

I haven't even noticed bloat nor slowness on Windows. I recently moved my entire library to the PC that I just built and it's incredibly responsive and snappy, far more so than my MacBook Pro from last year.
I know that it used to be slow and unreliable but I think they've made substantial improvements in the last couple of versions to the point that I think it works fast enough for my needs.

You know, my only issue with iTunes is that half of my music was acquired through different sources so it's not going to be organized properly. I do like the UI but then again half of the media players out there have something similar.
Now, Cog is good too. The kode54 fork of that supports really random music formats that most players just won't by default. It's a pretty simplistic player though.
