For computer monitors, most of the time, it's true 144 Hz.
That interpolation shit is mainly commonplace among TVs. (Which you can immediately tell because no content those TVs see will ever be above 60 Hz either way. The majority is 24 Hz)
If it's marketed as something ridiculously high like 240 Hz, it's also some sort of interpolation scam.

GSync and Freesync literally ARE Vsync when your GPU outputs more than your monitors refresh rate, and since current implementation of VSync isn't true VSync but actually a Render Queue that fails to discard/swap old frames out for new ones, it's complete shit if you care about input/display latency.
TL;DR I wouldn't use Freesync/GSync even if I could for the same reason I'd never turn on VSync.

You can turn that off, so if your framerate goes above Freesync/gsync max it will disable vsync and simply allow screen tearing. Which doesn't even matter much, because screen tearing at 150+fps isn't that visible.

freesync and gsync enables the scaler in your monitor to display the actual frame of your gpu instead of displaying one half of the next frame because you're not able to get the max framerate that your monitor is able to display
vsync virtually caps your framerate to either 30 or 60, when we speak of a 60hz capable monitor, to do the same, but since no game is stable on max settings and 60fps, adaptive sync can do the same at 45 fps for example
