Does private browsing really work? If I were to check with my internet provider, verizon, would it show all of my history of websites that I used on private browsing? Assuming the device is apple. Can my wife see the websites I go on? Or does "private browsing" save me?

VPN first and then tor. DO NOT DO THE OPPOSITE. The VPN bounces you to a different server your isp won't see. If you don't do VPN first, your isp will know you are using tor, but not see what you're looking at. If you don't care about them knowing, just use tor.

Private browsing only counters local forensics. In other words, your wife won't know what websites you've browsed, because the URLs aren't stored on you local system.

Mind you that your ISP still knows, because all traffic passes unencrypted through your ISP. If you don't want your ISP to find out either, use a VPN or a network anonymizer like Tor (both use encryption for this). You can install the Tor browser pretty easily from https://www.torproject.org/

Private browsing modes are supposed to stop your browser tracking the sites you view, so no history/deletes cookies that kind of thing, it doesn't prevent things like your home router/isp/nsa/fbi/cia(basically sniffing 3rd parties) recording from which domains you requested webpages.
If you don't use secure connections, such as https, sniffing 3rd parties can view exactly which webpages you requested and even resolve the content.
You can tunnel out of your IP to a "trusted" proxy IP that promises not to monitor your traffic, or use some kind of anonamising service such as TOR or I2P, to prevent your router/isp from tracking the sites you connect to.

If your wife called your isp they would give her nothing. At the very least maybe a list of ip addresses maybe urls but I doubt your wife could get things escalated that high. Also if you dont have your wife on the account they wouldn't give her shit.

First of all, I'm not a US resident, but I doubt your wife would be able to. You could browse through their privacy policy to make sure, but I'm fairly sure only your government can request these sort of things.

I'm not saying I approve (or disapprove) of whatever it is you're doing, but consider a VPN or Tor for these kinds of endeavours I'm suspecting you of.

That's hilarious. You should be fine from isp side unless your wife suspects and is prepared to dig through mountains and mountains of logs, try it yourself. Dig through somebody else's traffic and try and work out what the hell was going through their mind when they were browsing.

What you should be worried about is your own opsec and that of the dating agency; I bet you used your work phone or your own cell, I bet you didn't bother to set up a different email address, I bet you go to bed shitting yourself that someone will call during the night and your wife will answer...

For the first 2 years the university had their own home run system which was behind a proxy, undergrads had a hard cap of 3.5GB a month and my entire browsing history is still stored to this day as far as I'm aware. They did promise never to look at it though...
The following year they joined what I suppose you would call an NREN, the proxy was no more and most traffic did not count towards student caps, I actually don't think I ever used my quota after that.

I don't live in the states, so laws about ISPs are different.
