There's too many variations, depends on the movement, on the dial, on the crystal shape, material.
The hands are friction fit on the movement.
The dial usually has two rods called the feet resistance welded on, these rods go into holes on the movement and can be friction fit, or clamped in place by screws or have tiny cotter pins going through them or have slots cut into them that fit D shaped cams built into the movement.
As best as I can figure out the movement is held by a movement ring which can be friction fit plastic for chink made watches and seiko's or be made of metal for any respectable brand. The metal movement ring presses against a tiny lip on the outside edge of the movement which stops it from falling out the back of the watch, and to stop it from falling forwards and hitting the crystal two metal tabs screwed to the movement fit into a groove cut in the movement ring.
The movement ring itself uses similar tabs that fit into a groove in the watch case. Some watches which use large movements don't need a movement ring and the movement tabs slot into the groove in the watch case.
Crystals can be glued to the case, usually they are press fit using a tiny nylon gasket that fits around the crystal. Acrylic crystals sometimes are made to slip over the watch case and a bezel is then squeezed over the acrylic crystal, kind of like how a rubber band holds plastic wrap over the end of a tin can.
Just watch repair videos and it should be pretty obvious the various systems in use.

I personally consider it less retarded to buy a richemont Panerai / IWC rep (specially with neat case materials or functional movement enhancements like long power reserve or quick set hour) than a genuine one since the genuine are truly hilariously overpriced - specially seeing as the reps are close to functionally identical. But their designs are still generally oversized and retarded.
Higher end than that makes less sense though - if you buy a Patek, VC, Lange, etc you hopefully do so for the craftsmanship and finishing - which simply can't be compared.
If it's purely for shallow aesthetics that does exist. Movement plates are a thing and they'd probably even fool the common WIS in person without a loupe / camera, but that's not something I'm interested in.

Take a look at something like a Rolex Sub. The amount of money it would take to get the tooling required for their 904L steel, get the equipment to make the parachrom hairsprings and to train new staff on all of it, your projection costs for a replica of a modern Rolex would be significantly higher than what it would cost for Rolex to make them, probably even quite a bit higher than simply buying them until you've produced a pretty significant number of units. There are no replica watches of any watch currently in production, there are no replica cars of any car currently in production.
Real replicas that people are putting time and effort into are only of things that have been out of production for a while, and often the original examples are so scare not everyone who wants one can get one, so one or more is used as an example for reverse engineering and then replicas are made from the reverse engineered plan. Some of the completed replicas hit the market, others go straight to museums. Now, if you attempted to make a replica, and you did a shitty job of it, it would be a shitty attempt at a replica, it wouldn't become a 'fake' because a fake does not mean a poorly done replica, and a replica is not a well done fake. Well it really shouldn't be that bad, but then again don't expect much from an old watch with a snap-on caseback. I was wearing it when it was at least 100 F outside and close to 100% humidity and as you can imagine I was soaking it in sweat as a result, normally I would wear a diver for situations like that.
It's not hard though because as I said it's a snap-on caseback so you just pop it off and let it air out a bit. The watch never stopped or anything and so far it hasn't seemed to mind at all but I imagine it wasn't good at all for the movement or for the dial and hands.

Well the Constellation for example at least has a screw-in caseback with a weak little rubber gasket so that's at least marginally better, not that I would want to get it wet either. I would say any vintage watch even if it was originally water resistant or "waterproof" is suspect unless you get it serviced and pressure tested. Certainly you aren't stupid enough to think those Chinese mushrooms you yourself gave as an example are making a copy "exact in all details," they are only trying to barely mimic the most outward appearance of a well-made watch of whatever brand they are copying at the time. They don't care about any of the important technologies or qualities of actually well-made watches. This is a technology board, they aren't even attempting to take into account the details that theoretically should be important to us.
And this is why we know that people who buy those watches also don't care about any of the important technologies or qualities of well made watches in that purchase. They could almost always spend their amount of money on a vintage or modern piece thats engineering efforts were more focused on a quality movement, materials and finishing for the price rather than a maker that is dumping their budget into trying to copy an applied logo of a crown or print in the same font as some company actually making good watches.
This is not to say that all people with impressive watches necessarily care about, or even understand, the technologies that go into it. I'm sure we've seen lots of examples, online or offline, of individuals who have very expensive or well made watches for lots of mundane and uninteresting reasons, like trying to be a member of perceived 'club of nice-watch-havers' or trying to flaunt wealth.
