Okay, /g/, I have two partitions, one with Windows 10 (ayy lmao), and one with Ubuntu. What's the best way to encrypt my HDD?

You are doing it wrong.
remove windows 10 and use LUKS+LVM
So you have Ubuntu installed twice.

do you really have a linux partition, or is that just to keep people here happy?

No I really have a linux partition. I use it for C development.
On your Ubuntu partition, consider dm-crypt/LUKS for FDE, or eCryptfs for just encrypting your homedir. Windows can open dm-crypt/LUKS partitions with LibreCrypt, but I'm not sure if you can encrypt your Windows partition with it.
Note that using BitLocker on Windows 10 sends your encryption key to Microsoft by default[1], "for your convenience". I'd advice against using BitLocker for this reason, but that's up to you. Maybe VeraCrypt is more suitable for Windows, but I have no experience with VeraCrypt.
