If I'm only going to be connecting using connections I know are secure, is there still any benefit of using SSH over Telnet?

There is literally no reason to use telnet over SSH. The only time I telnet is into my phone for Remote Keyboard.

changing the default port is a meme. anyone with nmap will see that something's listening on port 31337 or whatever, and from there it's about 300 milliseconds to think "I'll try to ssh to it". I'd be shocked if script kiddies scripts didn't automatically try this.

Port knocking isn't proof against replay attacks, and has nothing to do with changing the default ssh port.
