Debian, always.
It's the reference distro.
It's stable as fuck, almost to a fault.
Ricers switch away from it because it's too reliable.

btw, I'm going to run it on a tab (t100ha, at least VM) choosing one that is optimal for performance won't be a problem, but a touch friendly one would be cool

Not him, but gnome 3 is probably the most touch friendly DE. Other than that unity.
Look into Fedora (best gnome integration), Ubuntu Gnome (just werks) or Ubuntu (Unity one). It's best you wait till mid april since that's when new version of Ubuntu LTS gets released

just gotta make a choice for desktop environment, I'd say gnome for touch. Antergos is essentially arch without all the unnecessary setup. Gains you easy access to AUR and actually uses Arch's repos (manjaro doesn't)

That's true but even above that I would say:
Package management or lack thereof matters more than distro or rather IS the big difference between distros and what usually makes people stay with a certain distro.
Using the same desktop environment or just a window manager, you barely notice any difference if any between most distros until you have to update or install something.

Unfortunately, I've not experienced this. I guess I like distros like Ubuntu and OpenSUSE holding my hand with some things. One small thing that annoys me with Debian is how I'm not in the sudoers list initially

Oh, and proprietary drivers in Debian are annoying. Even after hunting down the Iso with the proprietary shit bundled in, it still seems to be a 50/50 chance that something won't work
