So what goes into a stable build that performs reliably? I'm thinking of moving to Intel because this super old i3 in an iMac performs better @1440p than the FX6300. I have stable temperatures and all around stable build but it's just unreliable, framerates drop randomly without CPU usage spikes...

Yes you should switch to Intel.
They make the best CPUs and have for a long time now.
AMD offers the most "bang for your buck" but they don't offer the most bang, just a good compromise if you are forced to compromise.
If you can stretch your buck a little you can buy a better CPU, which is Intel.
