It depends on the chipset and the level of what you're expecting. If you want a full ASOP rom then you need to buy something from a company that offers a bootloader unlock and has a chipset from a manufacturer like Qualcomm who publishes their kernal source. A lot of these Chinese phones have chipsets from Mediatek, who don't do that, which means limited amounts of roms.

24AWG stranded copper wire would be fine for basically everything you'd use a USB cable for. You could probably go up to 28AWG solid-core and be fine.
