Is a Ubiquiti EdgeRouter X + UAP-AC the best router/WAP combo for home networking, /g/? Or should I just buy a higher end ASUS/Netgear all-in-one router?

Buy a WLAN chip and a parabolic dish and solder it yourself.

get a TP-link archer router, best bang for your buck at the moment

TP-Link is shit tier, especially after their anti-OpenWrt announcement. I've had nothing but bad experiences with TP-Link routers, they have shit range and speeds fluctuate wildly when using them. Stay away.

I use the Netgear Nighthawk R7000, I've had no problems with it whatsoever and the range is great. The price is pretty much what you'd pay for a Ubiquiti router and their AP, but I've heard nothing but good things about Ubiquiti products too. I'd say you can't go wrong with either desu

No.
Not even for the money.
A nice pfsense box with an Engenius AP to match what most of your wireless devices are capable of is the better option.
