George Hotz uses ubuntu /g/, what makes you think you need anything else?
I would rather not have all of the bloat on a clean install.
Also, Unity Makes me feel like I'm on a mobile device.

Now talking seriously, there is nothing wrong in using a non-riced or riced desktop, and he probably just installed ubuntu in the car because it was faster to install (again nothing wrong in that).
