I recently read that GRRM still uses DOS to write his books with WordStar and I'd like to give it a try, I've got an old acer netbook starving to death somewhere in my room and I'd like to know how could I install DOS and use it only as a "typewriter".
Also I'd like to know how I could export my files.

Install Debian and use nano.

Neither have I, but I'm sure the process is not very different from literally every other OS out there.
But there are probably better ways to do what you want to do. For instance there are probably a lot of distraction-free editors for *nix distros, and probably a few for Windows as well.
Try searching around for a distraction free editor for Linux and make it launch on login in fullscreen in your bash.rc

I use DOSBox as my VM DOS computer as I had trouble figuring out hardware compatibility for my setup and I had to play Treasure Math Storm! again, some older ones work better. You really need to just try it out, assuming you backed up your hard drive.
Think running a simple text editor (like Vim or Nano) in Debian, preferably from command line would do just about the same thing.
