Are these good medium quality presets?
Is there more/less I should be doing?

depends on the version of ffmpeg, the one I'm using has opus as default so you better still call vorbis, to be sure
never heard of -deadline realtime, though

Is -ab 320k constant bitrate?
Is -q:a 0 variable bitrate? Should it be used instead?
