If you just install random programs people recommend, you're going to end up with a cluttered system that is foreign to you. Instead, if you're using your computer and realize you need some program (e.g. a music player), ask in one of the Linux threads here for people's favorite music players.
Anyway, here are some options for varius types of programs.
>browser
Chromium, the open-source version of Chrome (Chrome is just Chromium + some extra proprietary stuff like Flash) is a good browser if you're used to Chrome. Firefox is another option, and I believe the default in MAATE. There's also Epiphany, which is made specifically for GNOME (the project that MATE forked from). If you prefer minimalism, there's also uzbl, dwb, or surf. I personally use Chromium, even though there's some confirmed Google fuckery that has happened in the project.
>PDF viewer
Atril, the default MATE PDF viewer, might suit you fine. If you prefer minimalism, there's also zathura and (my personal favorite) mupdf.
>video player
If you need a GUI, try Totem, the default GNOME video player. If you don't mind using a terminal or keyboard controls, mpv is a very nice, feature-rich video player. There's also VLC if that's what you're used to.
>torrent client
If you need a GUI, try qBittorrent, Transmission, or Deluge. I've generally found qBittorrent to be the fastest and most reliable of the three, but YMMV. rtorrent is a very good command-line client that can handle tons of torrents, but the controls and interface are pretty clunky and it can often hang on shutdown in my experience.

The de facto is still Gimp, but I've heard good things about Krita. I don't have much experience here, but as long as you're not doing really fancy professional work, Gimp should suit you fine.
