The package maintainers make sure to update to the newest version available no matter what. And sometimes reliability isn't that great.
For example, the new Nvidia drivers didn't let me start any Source games through Steam, so I downgraded with Pacman until it gets fixed.

It doesn't break that often, and even then it is easy to fix. I wouldn't use it on a server, though. It's a desktop/laptop OS for experts and wannabes.
