Basically before iOS 7 Scott Forstall (also known as a little "Steve Jobs" was in charge of the visual design. Most people didn't like him but Jobs did. S.F. favored "skeumorophism" which is everything has to look like a real life analog. Reel to reel player on the podcast player, notes app has to look like a physical notepad, iPad Calendar app has to have fucking leather grain appearance. Shit like that.
Meanwhile, Jony Ive, who makes the devices, is making new devices that stand on there own with no reference to real world design. Ive hates S.F.'s designs since they're basically opposite of what he wants.
S.F. is in charge of iOS at the time Apple Maps comes out, which releases with a poor showing for quality. Apple corporate drafts a letter apologizing for the rocky release, and Tim Cook asks S.F. to resign it. He refuses, so Cook signs it instead. This (in combination with other things) leads Tim Cook to fire S.F. and put Ive in charge of visual design.
Jony Ive is now like a kid in a candy store and rushes to completely trash what S.F. did. The result is no more bullshit skeumorphism, but since it was done so fast it wasn't done particularly well. And then after doing such a jarring change in iOS 7, they have to do more incremental changes in 8 & 9 to avoid pissing off oldfags who use iPhones.

The Freestyle machines are cool but
1) Reconstituting everything from the cartridge powders is not taste identical. Vanilla coke from a single syrup tastes different than coke base + vanilla base.
2) Shared spout makes things a bitch unless you run several seconds of water through it. Otherwise if you get a sprite and the last guy had orange root beer your sprite is going to taste like shit.
