Would I be better off disabling the windows 10 spying or using windows 7 without the botnet updates? Do the Enterprise versions of 10 have spying? Are they a paint to get? I am already dual booting ubuntu but I need windows for work. Also if enterprise is the best option could someone link me to a good version?

I installed windows 10 enterprise and inspected packets and traffic for 24 hours - but sure I tried to unbloat it as much as possible before doing so and blocked everything I could block and research online via hosts and also firewall rule.
0 communications in 24 hours - except some standard IP of Microsoft in Chicago used to resolve ipv6.
Disabled ipv6 and there were literally 0 communications with outside world.
It is designed to spy you, but it just doesn't, the moment it does so just stop using it until they address the problem.

Also for debloating and first phase of blocking communication it's easier to use a script one 4chan used wrote. ( actually it's a group of scripts, read the readme ).

Un-zip - done you have the scripts.
Also find online all the IP's people found windows communicating with and make a list of them, remove duplicates - also add the ones spybot-anti beacon uses and create your final hosts file also remember to add them in firewall rule.
Sure if Microsoft wants to spy on you they can still do it - but that could only happen if police is interested in your and they force Microsoft to do so, natively if you do everything well - you will be safe.
