NoSQL is one of many different architectures.
There is single "NoSQL". Grouping technologies as disparate as Redis, Neo4j and Cassandra under the same banner is a pretty bad way to discuss any of them, never mind explain how they differ from SQL.

Definitely RethinkDB. It's what Mongo should have been (but for a number of reasons couldn't be), and the guys in charge at Rethink clearly have a better grasp of what their goals are and how to get there.
