on the ubuntu front, just use the mini.iso and do a minimal install. Also Xubuntu allows you to do a minimal Xfce install.

If you want to, just download a minimal iso and install just what you want.

Lots of preinstalled packages, takes up a lot of space on the partition
The programs themselves are very resource hungry

Ubuntu suffers from both and you can't really do much about it after installation.
Unity itself is very heavy.

Removing unity or lightdm will fuck things up. As will installing an alternative DE. Don't do either of those. If you want a different DE, use one of the flavours. If you want to be 1337-tiling-wm-only420packagesonmymachine, install debian minimal edition or arch if you want up to date software.
