You would think Youtube is the big user, but it really isn't. Compare Youtube to Netflix and consider the amounts of data being used. Most people aren't watching videos longer than 10 minutes on Youtube, and even then that doesn't guarantee 1080p. Netflix on the other hand is a 90+ minute film that likely will be in 1080p. Netflix chews through a lot more data a lot faster.
Also comparing the price of the unlimited plans isn't the best comparison when you take these services into account. It's something like $40 for 2.5 GB of data on T-Mobile, but then you consider being able to use unlocked phones (read: bring your phone over from another GSM carrier or being able to more easily get and use a used phone) and the Music Freedom and BingeOn services.
