The 27" is mostly desktop already - it uses a full size socketed desktop CPU and 3.5" HD. Only the RAM and GPU are mobile.

The 21.5" model is the one that's a laptop shoved into a case alongside a monitor.

I think the iMacs are fine as they are, though. What I'd really like to see instead is:

1) For Apple to update their thunderbolt displays with Thunderbolt 3 and the same display panels found in the 27" iMacs

2) For Apple to release an xMac, an upgradable mid-high end "prosumer" headless minitower that fills the niche that the entry level Powermacs used to fill

There's a class of users that sit somewhere between consumer-oriented desktop and 6+ core Xeon with dual FirePros and Apple currently isn't serving it at all. If that's what you need you're best served by building a hackintosh, which a fair number of people do now. Apple could be cashing in on these folks.

The market is headed towards all-in-ones and thin clients, not build-your-own-towers again.

The market has spoken and people prefer buy and forget hardware like their phones, tablets, and laptops. The people who frequent /g/ or enthusiasts are niche now.

I respect it already as a desktop class computer for most use cases. That being said, I personally would never use one as my primary machine. But, if I needed something niche (graphics editing and UI prototyping, for example), then I would consider purchasing a Mac Pro as an auxiliary machine.

As far as laptops go, the Macbook Pro still blows the competition all the fuck out.

That blows. The current TB displays are super updated between there being an air gap between the display panel and front glass (iMacs have been direct-laminated for ages now), Thunderbolt 2, and old magsafe. There's no way I'd spend money on a TB display right now.

That really sucks, because having the monitor act as a TB hub with a whole extra set of powered ports on their own PCI-E bus conveniently located right on the back of the monitor in combo with a tower on the floor is awesome. Stuff sitting on the top of your desk can hook into the monitor cleanly with short cables, leaving a bare minimum of long cables stretching down to the tower. Less mess and way more port headroom should it be needed.

Right, the TB displays have been a bad buy for some time now. I wish Apple would just eat humble pie and use an MST connector to make the 5K TB display happen, but they'll never do it because it's not perfect.

As for cable extension, I've been using something like this for some time now http://9to5mac.com/2014/12/12/review-elgatos-thunderbolt-2-dock/, the TB display hub is a far neater solution though.

I find that the majority of you neckbeards don't even upgrade your computer much: Once it's built, you keep it around until it's outdated then build a whole new system, MAYBE salvaging some parts like the case and PSU. Manufacturers love thin = forced obsolescence and cheaper parts (smaller batteries, weaker processors)
Media and marketing says thin = status symbol (it's a physical proof that you own a newer device, something visible to onlookers, unlike specs and tiny version numbers)
Consumers buy into it

I have no feeling towards macs, but recently it was released that even a Macbook (Note, not the MPB) can render 4k videos much faster than one with a PC with an i7 because of Final Cut Pro. Ultimately, it comes down to optimization, which Apple has completely nailed.
