Seriously, portage+pkgin sounds like a wonderful dream team combo. USE flags and other delicious things where you need to compile and a god tier binary package manager for most things.

Assuming this project is in any way release-ready, the repos should contain the vast majority of whatever you might use in Linux. Most Linux programs compile just fine on other Unix-likes. NetBSD has a decent Linux binary compatibility layer for the other cases, but it's obviously not 100% reliable. I've found it better than that of FreeBSD but that's just my anecdote.

I use several add-ons with Firefox, and I obviously download readable files such as .odt files or images.

I also use LaTeX, and I don't know if OpenBSD has an integrated text editor.

Does it have any meaning to install third-party programs on OpenBSD, from a security point of view ?

If there are tools like, at least, sandboxing to prevent programs from causing security breaches somewhere else I'd like to install it in a VM to give it a try. Thanks for your answers !

Like any other operating system, the more shit you install, the bigger the attack surface.

The OpenBSD team has put some measures in to terminate misbehaving programs, but it doesn't beat good sysadmin practices.

You're fine if it's for desktop use though.
