Is it okay to just use github for storing all my personal projects?
Is there a better site to use for just hosting projects?

There's a program called git.
Linus Torvalds made it.
Then some guys made Github.
It uses git.
give a try to GitLab

This is better for personal projects since you can make your projects private. You can't do this with github unless you pay.
Just setup gitolite.
I use github for things I want employers to see, and I host my own repos on my server for private stuff (git init --bare). I don't bother with a gitlab/github like front-end for those, since there's no need to access them through the web. I have been looking at Gogs recently, and might set it up.

Or, for some reason, the public don't want it to be in public.

you know you can use git entirely locally, right?
gogs is literally god tier. It's like gitlab but isn't a piece of flaming shit

private owncloud on a personal server or a simple ftp you can give access to whoever you feel needs access to it.

yep, good luck being taken seriously when you have https://shitdomian.com/gitlab/project.
for employment purposes github is preferred and bitbucket is passable. anything else is "what the fuck is that" tier as far as HR is concerned
