Okay so I am a normal user of Windows, but I am looking to get into the Linux world. What are some good beginner distros to start out with, preferably one with nice, modern, UI.

Mint KDE. KDE is the closest DE to windows out of the box, but I personally liked XFCE better from the start. It being far less bloated appealed to me more than being Windows-like. KDE is known for being extremely customizable, and that's a well deserved rep, but XFCE is also very customizable as well, just not quiet as much. You can make it resemble Windows as well.

If you have more limited resources that would be a better route imo. KDE does well on newer hardware, where resources aren't an issue. On older, or budget systems though, not so much. I have OpenBSD 5.8 + XFCE running on an old Pentium 4, and it's surprisingly fast and responsive. To the point that it's easy to forget just how old the hardware actually is. I'm pretty sure it would not handle KDE at all.

I really don't think it is much different than ubuntu but it probably depends on your level of experience. Its my main distro and I'm on it right now.

so long as you're good with apt-get there really isn't much of a difference.

also creating a live USB with persistence/encrypted persistence is pretty easy if you just want to try it.

Mint. I started with mint due to friends recommendations, and you get a good idea of what you can and can't do with Linux since that is initially what you will discover. Then from there you can learn how to customize, and compile and all that fun shit. Who knows, maybe you'll even install Slackware down the line and shove it in everyones faces.
