But I honestly think you're sol because even if you could "hack" the machine you'd probably have to physically attach something (think a flash drive) and you'd have to do it without security noticing. I'm pretty sure that casino operators would keep the info about their slot machines under pretty close wraps. Needless to say, provided you could get access to a slot machine identical to one used in a certain casino, you could try and configure it yourself.
My guess is that these slot machines are networked in some way, maybe through LAN. If you knew how they connected, you could (in theory) find an exploit to access them, but even then it's unlikely there is a cash out button.

i'm fairly sure that it is pure random. there's little things that vary by machine. some have minigames that if you get, you can play the game and your performance can net you a chunk of cash. and there's games that the longer you play them and the more you hit, it increases your chance to get free spins. i've also heard that the odds of getting a jackpot are higher on the high roller machines ($2-10+ min bet) but i doubt the validity of that.
honestly though, i don't mess with the machines in any way personally, so i don't know with absolute fact.
i can tell you that the casino i work in has well over a thousand cameras, several people constantly watching cameras, and at least 15 armed guards on the floor.

I own a slot machine like the one pictured. You would need physical access to the inside of the machine. This is a nonstarter, really. You'd have to break or pick the lock (very conspicuous), open the front cover (very, very conspicuous), and pull things out until you get to the electronics (very, very, very conspicuous). After that you'd need to probe the electronics and see what happens when you manipulate the hardware. Or while you're inside it you could just start jamming the coins into a bag.
All of this is academic, because in reality the moment you do anything to the lock a pair of pit bosses will scoop you up, bring you to the back room, break your knees, then toss you in a dumpster.
There just isn't a realistic vector of attack here. The best way would be to get a job as a slot machine repairman and bide your time until someone slips up and you get unsupervised access to the innards of one. You could then modify the machine and have a friend go in the next day to get the payout. However, you'd have to have some way to trigger your modification for only that person; if the machine pays out big every time it's played they'll catch on before you can even get to it.
In short, the only practical way to rob a casino is an actual armed robbery, which is also a stupid idea because you will get shot in an instant.

That would be less practical than an abortive slot-machine hacking attempt. You'd need extensive capital for machinery and workers (from whom you'd need to keep the heist secret), plan carefully to avoid hitting gas, power, or water lines, and some way to justify your digging.
You could possibly find out where the vault is from a public building plan. Assuming you are able to dig under it, you'll need a demolitions expert to blast through the floor and get in. Basically it would be Die Hard With a Vengeance, except you'd probably kill yourself before getting underway.
Successful casino robberies are rare as fuck. There are much better targets than hardened vaults deep in well-secured casinos.

The only way to do what you want is to steal the entire machine or break it open in the middle of the casino. It's impossible to trick them because the random seed for every machine is different, and changes daily.
By the way, you'd have better luck robbing a bank. Casinos are some of the most secure businesses in the world.
