Mainly used for FTP, SMB, Plex for ~6 people, centralised backup for 2 other PCs, automatic photo upload for my phone and a few VMs for testing.
It's a fucking excellent little server if you dont need more than 4 drives. Cost me £170 new but the xeon is an upgrade. Base model comes with 2gb ram and a celeron g1610t which by the way was plenty up until i started more than 2 or 3 people use plex. The same heatsink handles the Xeon pretty well too so it's quiet as fuck, one 120mm fan and a 60mm PSU fan. Also has a dedicated iLO ethernet port which is handy as fuck.
Playing with the idea of getting a dedicated GPU for steam streaming.

Red drives are pretty good now, from what I have been seeing. HGST are good too. Those ones you linked to are archival, so they will be slower and aimed at high reliability.

No raid, AHCI mode and using them as 4 individual volumes. Two of them are mirrored onto the other two using FreeFileSync.
Reds arent bad, very cool, very quiet but sup 7200rpm unfortunately so not the fastest and a bit more expensive. In hindsight hitachi or hgst would have been my other options for slightly more performance.

It's not really functional enough to get a proper, user friendly configuration going. You WILL have to at the very least do shit like log in with TeamViewer to unfuck things or even need physical access to the machine itself.

I do, but I had to do a lot of work to get them to work right. They are heavy duty sliding rails from the early 2000's for HP or Dell servers.
I had to use pic related (these: http://www.amazon.com/gp/product/B004KFBLV8), a lot of measuring and guessing, a lot of drilling, and a lot of time to get everything to line up. I used three on each side.
They work, but aren't perfect. I know when I bought the case a few years ago I saw a Rosewill rail kit, but haven't been able to find it since.

Squeezebox server for audio to various wifi radios
Works quite well, draws 100-130w running, runs 24x7 with power management disabled.
tl;dr : no need for an i7 in a basement PC that does nothing but serve files.

It works pretty well for a lot of games, most of the issues I'd say are with shit like launchers, some stability issues, some loss of focus issues and shit like that. Those require either physical access to the host, though in some cases you can get away with fixing it with TeamViewer.
Still, if you want to sit your ass in front of your TV and play something, you probably don't want to keep running back to the host or to fuck with TeamViewer to launch games, close games properly and fix whatever issue pops up.
Basically, core functionality is quite good but it feels beta-tier at best and missing features that should be essential (you can't even turn off the client without closing the game, well, you can if you kill the streaming process, but what kind of shitty solution is that?).

It depends on the volume. SQL and Hyper-V are mirror. Transfer is stripe (no redundancy) and Profiles is RAID 5. I haven't looked into performance too much, but I'm not having any disk queue length issues.
And there is one exception. Media is an esata RAID 5, with 4 4TH drives. For some reason, I can't get it to present as JBOD anymore, and I don't care enough to replace the enclosure and controller.

As others have stated, it depends on what you're streaming. The benchmark score is 327 for that CPU. Plex (because it can not currently do GPU transcoding) requires a score of 2000 for a 1080p 10mbit stream.
I don't know about Kodi. If it can do GPU transcoding then I imagine you will have much better results.
