Debian testing isn't unstable at all. It's just less ridiculously over-stable than debian stable is.

again, try keeping stable but using jessie-backports. it should contain fairly up-to-date packages.
kernel is at 4.2.6, nginx is at 1.9.4 to give you some examples.
