Full stack freelance webdev here. Almost all my sites require plenty of Javascript to run before they will work. Do you know how many employers have insisted that the product works without JS? Absolutely zero.
If any ever did, I would tell them (truthfully) that it will cost twice as much to implement full functionality without client-side scripting for no improvement whatsoever for 99.9999% of visitors.
The era of server-side rendering and static forms is long dead and buried. Good riddance.
