Refocusing focal points to create a dot matrix that gets refreshed at a ridiculously high frequency is not something that I would have thought of for sure.

Strictly speaking, it's impossible to make a hologram that responds to touch all by itself.

Based on the technology, which I like to think of as a laser CNC, you cannot integrate touch into the hologram.

But there are two very good technologies which can be used in this application:
1. Infrared ray disruption
This one describes a process where an infrared light bathes the projection. When a human hand (or anything) interrupts this projection, a sensor will pick up that interruption. This one is plagued by calibration issues, and I personally consider to be the likeliest candidate for the touch interaction.

2. Microsoft Kinect + Computer Vision algorithms
Similarly to the first one, all you really need to do is figure out when the blob is at the correct position to be blocking the light, and then consider that to be an interaction. This one is plagued by resolution issues.
At centimeter scales, I seriously doubt they used a camera and computer vision to do this.
