I can do it, I just don't understand why there isn't an option to do it in the little window that pops up when you right click on a file and select "change default program"

There was an advanced file association manager up through Windows XP. Then microsoft decided it was too confusing I guess and they removed it so now you have to use the registry.

I'm still bitter as fuck about it.

No it's bullshit because you can only have ONE association per extension. For example you can't right click on a script and edit it if the default program is set to execute it.

there IS an option to change default program.
Right click > Open With > check the “Always use the selected program to open this kind of file” (or something like that) > Select the software you want to use your file with

And there is literally a tab for that in Win10’s settings for the main types of file (default software for emails, internet,…)

There is not much than can go wrong with basic USB. If it really doesn't work at all you probably try to power the device via USB and fail to do so. Device-class specific functions are a whole different beast which may need drivers to properly work, but an USB not working at all? Highly unlikely.
And Mass-storage isn't exotic enough to cause driver problems.
