I am wondering if there is anything else out there that's a better option for viewing and editing PDFs than Adobe Acrobat Reader. Any PDF related suggestions or opinions?

The ones integrated in most OS by default in most GNU/Linux distros are fine. AFAIK open office allows you to edit pdfs.

Depends on what you need really.
A lot of people can get by with a reader + annotations + form tool.
I use okular and it works great for those.
On some machines I use evince as it is a lot simpler and the print controls are better for some reason.
I just use my browser
