That seems more of a software bug than anything.
Why does it work on all players BUT iTunes? Something must be wrong with iTunes. I'll not use it until they fix it.

FLAC is perfect what what it is, lossless recording.
If we were to argue about what is the best codec for listening to based on filesize to sound quality, there are better codecs to choose from, but if you want to store an exact digital copy of a source then you use FLAC.
It's that simple.
