I've found an iPhone 5C in a delivery package that I received (the owner must have dropped it in there by accident). It's saying that there's no SIM so I assume that the owner has cancelled it remotely. Is there anything interesting I can do with it?

I didn't steal it. I work in a store and I found the phone in one of our parcels that we received our stock in. Also I just opened up the sim compartment and it looks like there wasn't any SIM at all.

Don't reset it, that might give you an iCloud lockout screen or require you to get a SIM to activate it, both of these locking you out of the device. Just delete the apps you don't want and use it like an iPod. You could also jailbreak it if that tickles your fancy.
