no one said you can't mix and match ram.
What they say is that if you mix two or more different ram sticks in the same bank (or if you have full interleaving in all the banks) the computer will automatically adjust performance on all the sticks to mirror the lowest performing stick in each bank.
You also could loose your ability to run parallel sticks at once, and have to basically run one stick till it fills up and the overflow then gets distributed to the next stick in line reducing overall performance.
For normal computer use this may make little to no difference, but on a server, rendering workstation, or even a gaming station, it can make a significant impact on the overall performance of the machine.
