Computer games can exist in a vacuum and don't have the same high requirements as writing a Kernel / VCS.
If doom crashes, it just sucks. If a Kernel crashes people loose tons of money, or their lives.
- maintaining strict backwards compatibility to previous versions, cause you will never be able to control which versions of your Kernel or VCS people will use
- support for arbitrary processor architectures, arbitrary hardware and any software that runs on top of it
- much harder to test than games that you can just execute
- bigger scale of developers, which makes the development process much harder
