Frutiger light is by far the fucking best font for gui I've used so far. Microsoft has shown with segoe ui that humanist fonts are the way to go in ui design and not the shitty hipster grotesque crap apple and Google is doing.

Generally I set things to use FreeSerif but it's a little... janky, I guess. FreeMono though is pretty good for me as a terminal font. Gentium's also good for coverage. Noto's good for coverage.
Most of what I do tends to mean I get specific fonts for specific scripts, like junicode which targets a lot of arcane medieval scribal bullshit, or like more in the hobby dimension iran-nastaliq which is targeted at very stylized kebab writing and happens to support a lot of really weird letters letting you, say, write something in jawi and have it look *so* pretty
I also want to extend my heart to some of the old academic standbies like Georgia or Verdana.
And I think it's not free-libre either but Tinos is pretty nice
