If you want less bloat and more configuration options, perhaps Debian would better suit you.
If you need to ask yourself why Gentoo would be useful you probably aren't the kind of people cut out for it.
Well 4 or so hours into compiling gtk3 from source, I can tell you configuring and compiling the linux kernel was kind of fun, and the install process took me like 5 hours
It's really lightweight if you compile things the way you like and set the right flags, so your kernel and OS is literally tailored to your hardware, by you.
It has a cool screenfetch logo. It's really cozy once setup if you like terminals, and I really like terminals.
If none of this sounds particularly interesting to you I wouldn't bother.
