So after being a laptopfag for quite a long time I decided to man up and build a pc

Mostly gonna use it for photo and video editing, raw 1080p mostly but eventualy will jump to 4k in a near future. +Some video games.

water cooling is neat and with the AIO kits both affordable and simple - but you certainly don't need it. a good air cooler is ok unless you're going for heavy overclocking.
as for the HDDs, it doesn't really matter. seagate and WD are fine. some people will tell you about seagate HDDs constantly failing, but it's a meme.
To start, watercooling is not a meme if you're overclock, but, get an fx8350 and a r9 280x and you'll have a hell of a PC.

as I said I will manly use it for video editing rendering and so on. 4k standard is around the corner

Let me just correct you here, a good air cooler is ok even if you're going for heavy overclocking.
A good Noctua will perform on par with or better than most AIO's, excluding the few 360mm ones that exist. You don't buy an AIO for performance, you buy one for the aesthetics. If performance is what you want, you either pick up a good air cooler or go for a proper custom loop.
