I have the Sony reader (PR-1 or something like that, the first, most basic one). Works great. It's not something you're looking to replace each year like a phone. As long as this shit can show letters to me I'm sticking with it.

I'm just waiting on color ink since I read copious amount of mango. I used the Nook HD+, but mine had a few problems with the touchscreen, eventually not recognizing my inputs at all. After that shitfest, I went with a chinese tablet with a high res display for $150. I think it's the Cube i6.

Sony Reader PRS-T1. Still works fucking good.
I would go for the Nook Glolight or whatever it's called. Backlit, 4gb which is plenty of space, and you can find them for under 50 dollars refurbished on eBay and probably other places as well. Mine works great, highly recommended. Takes ePub and mobi which are the primary formats I use, and of course, PDF.

I prefer hard books but I have a kobo H2O that I like. It is clear and page turns are quick 5 of 6 times and it is waterproof. I never use kobo store but you can add ttf font families easily provided correct names.

Formats are really not a problem with ebook readers, though. If everything else fails for some reason you can just put a very basic .txt file and read it that way.
I love my Kindle Keyboard, it's currently waiting on a replacement screen. I don't like the paperwhite, only textbooks are actually white.

You can convert any type of ebook format into any other format with Calibre, so in the end it doesn't matter what device you get. That said, you might as well get the model that will support the majority of your files out of the box:
If you plan on finding the majority of your books online or by pirating, get a Kobo because it supports epub and PDF and a bunch of other stuff (most books you'll find online come in these formats). Some Kobo models have microSD slots too which is nice if you'd rather side-load and never have to bother plugging the device into your computer.
If you plan on actually paying for books and making an account with a store, just get a Kindle. Amazon is by far the best walled garden out of all the walled gardens when it comes to books.

Malazan series is relatively recent in a sense it began in 1999 which is modern as fuck as far as fantasy classics go. Keep in mind it goes balls to the walls from the first book and doesn't ease you in at all, which has put off a lot of readers.

I've only used Kobo devices but when it comes to any e-ink screen, basically what you have to keep in mind is that the screen needs to re-render every time you zoom in, move the page around, etc. so it's a bit clunky but definitely not bad. It's worth it for the sake of not having to read off of an LCD screen.
