What are your guys favorite Raspberry pi uses? I want to buy the kit on Massdrop but also want to justify the $97 price tag if I buy it with the screen. I've scrolled through quite a bit and the only one I think would be useful to me is the homemade vpn.

Emulation (not only games).
HTPC. It is mounted completely hidden under the tv, runs xbian and I control it with my tv remote via hdmi-cec. Does the job 100x better than "smart" tv apps.

Wy not use a Chromecast?

Chromecast is hideously underpowered and janky to use. Videostream, the only video streaming worth a damn, is buggy as Fuck and makes you run back and forth to your computer, and emulating is a No go, since input and video lag from your Android device is awful.
Headless Raspbian Jessie, OpenSSH server, Postfix w/ SPF checking, Mutt, Dovecot, Greylist, SpamAssassin, Amavis, ClamAV, DCC, Razor, Pyzor, SpamCop, OpenDKIM, OpenDMARC (and thus necessary DNS RRs for MX, SPF, DKIM and DMARC), OpenVPN server, Tor entry node, HTPC, owncloud, Sonarr, CouchPotato, NZBGet, Transmission, SAMBA. To name a few. Have fun.
I use mine as a dust collector.

I have 2 Raspi's but I use Chromecast + Plex, it's very good

Same here, I have both versions, yet I have no decent use for them. Thought about making a NAS but I have enough hard disk space as it is and I don't want to power another electricity muncher in the house
hexbug spider controlled through a web server
(to be replaced with an esp8266)

The vpn and online hosting (website, java app server, etc) do it for me
Also a nice plaything to experiment with shit like the special features of btrfs, so you don't bork your main machine.
Don't get a screen for it or anything though. Be a man and control it via ssh.
