What AI does and can do in the near future is sensationalised in the media. The field itself also has a history of sensationalising what'll be possible in the coming decade, which has previously caused funding to skyrocket in anticipation of the the fulfilment of the lofty claims, then dwindle almost to nothing when the claims couldn't be followed through on.
To some degree the meme-ization of the field is necessary to convince clueless business grads to pour money into it; It really is a useful field, with practical applications---Researchers have just needed to hype it to help others see that.

Can you even get one in AI specifically? I would've though they'd only offer PhD's in sub-fields of it---say, computer vision or natural language processing.
Anyway, it depends on what you want to get out of it. If you want to spend your life thinking about cool shit, publishing half-baked papers to get grant money, and dealing with shitty undergrads, then get an AI(-oriented) PhD. Otherwise, aim for something closer to data science or statistics (preferably + CS), which are currently the most fruitful (in terms of practical use) and lucrative areas of AI.

PhD's are pretty much a scam. It's Professor Training and don't let them tell you otherwise - even in STEM. There are only 4 vaild reasons to do a PhD.If your situation is not on this list then you are making a catastrophic error.
In decreasing prestige (as decided by those whose respect you must earn):
1) You want to be a professor at a research institution
2) You want to be a professor at an expensive liberal arts college
3) You're from a country where people shit into ditches. You need a work visa and residency permit. (Your professors will all be foreign and can relate to this desire).
4) [Elite mode] You know EXACTLY what you want to do with your life and you ignore all advisors and duties and get a free masters in whatever the fuck you find interesting. By staying off the radar and taking external elective you do a concrete and useful masters project and laugh your way to the exit when your stipend is ended for "lack of progress". Since you never bothered to interact with the or waste their time, the professors will not be upset by this development.
Considering that the complexity of software will keep growing, then only realistic way of developing massive distributed programs in the future will be through creating specialized neural networks. AI is a pretty broad field with applications that you normally wouldn't even think of as AI. You can literally grow classical programs and even circuits using the same methodology you use to grow a neural network.
Within 100 years virtually all software will be grown, not programmed.

How hard is it getting a position as a researcher or professor? It seems incredibly hard to find some actual sources discussing the topic, everything is anecdotal and hearsay.

It is very difficult to be a professor at a Research University. You must affirmatively decide to do this before the second year of the program starts (around prelim exams). If you do this then your advisor will drive you really hard to do 10 things of which 6 might become papers and 3 get published. Depending on the speed of the SLOW AS FUCK journal editing your department/lab might give you the PRIVILEGE of staying an extra year to keep working on new speculative stuff and grind out those prospective articles.
If all of this goes well then you need your department to collectively vouch for your (this part is a little corrupt - your advisor will undoubtedly say that your work is innovative and important but sometimes you can goad the really famous guy in the department to help in the job search even though he knows nothing about your work).
Even still, you may need to do a post doc for 2 years at $50,000 after grad school and then only get 1 firm offer across a region as large as the US. You can take it or leave it and if you take it then you're living in a remote Company Town for 40 years.

We have no clue how to create neural networks for anything except some trivial pattern recognition tasks. The field has hardly budged in decades.
Hell, I give the people who just go "lets build larger and more interconnected SNNs and hope intelligence emerges" a better chance of making progress than people trying to push algorithms for problem based network design.
